Oliver Farm Lamb

Since 2021, we finish some of Gary’s top quality lamb at Oliver Farms. Harvested at 6 months it is perfect in the cast iron skillet, oven, smoker, over the coals or wood fire.  It is delicious with simple cooking and minimal seasoning as it’s succulent and flavourful without the “gaminess”. Even those who hesitate with supermarket lamb (New Zealand, Australian) KNOW how delicious our Napanee, Ontario raised lamb is and come back for more! Also included with our cuts are delicious recipes from some of our area’s top chefs with tips and ideas to make your cook memorable!

We have partnered with Doug at The Country Butcher in Napanee. Doug is an experienced craftsman who handles our lamb and pork with care and expertise. When you order butchered lamb and/or pork from us, Doug will custom cut and package your meats ready for your freezer.

Gary Evoy has been a quality Napanee farmer for over 60 years. He recently celebrated his 80th birthday!

Lamb Half Shares - How it works

We take pre-orders for Half Shares (approx. 20lbs) of the year’s harvest of succulent North Country Cheviot lamb grown at Oliver Farms.

Each box contains a variety of cuts that are portion-packaged for convenience.

A Half Share Box includes a frenched rack of lamb, 1 leg of lamb roast, 2 lamb shank, 6-8 loin chops and Lamb Sausages.

Quantity is always VERY limited so we suggest ordering in the spring/summer so that we can have it ready for you in the fall.

We will begin selling ½ Shares and smaller portions of Oliver Farms lamb and pork in our online FarmShop in the near future. Please CONTACT US for more information.

BBQ-Ready Whole Animal (One Piece)

$100 Reserves your BBQ – WHOLE ANIMAL (One Piece)

How it works

Reserve/order a whole animal that comes cleaned, butterflied, wrapped and frozen ready for your BBQ. (We can pre-thaw and marinate for pick up under special arrangement and additional cost). Our pigs and lambs are processed at a local government inspected abattoir.

We take orders/reservations in the early spring for processing during the summer BBQ season. We recommend to reserve early as we have limited quantities and will book up quickly. Please be sure to discuss with us in advance to be sure we can offer the month/date you are requesting. And check our In-Stock availabilities.

We raise heritage Tamworth / Duroc crossed pigs. Our Spit or Caja China or Smoker ready whole pigs range 30lbs – 60lbs. Smaller and larger sizes can be specially ordered.

BUTCHERED - WHOLE PIG 

We raise heritage Tamworth / Duroc crossed pigs. Reserve your whole pig in the spring/summer for pick up of your fully butchered custom cuts ready for your freezer in December or January. We aim for a dressed size of approximately 200lbs which will butcher to approximately 150lbs of custom cuts plus your choice of sausages or ground pork. We will send you a custom cut sheet for you to select how you want your pig butchered along with a list of choices for flavoured sausages. You will receive 3 or 4 boxes containing shrink wrapped cuts and sausages which will store safely for up to 2 years in your freezer.

BUTCHERED – WHOLE PIGS range $950 - $1150 depending on size and cuts

BUTCHERED – ½ PIGS  range $475 - $575 depending on size and cuts

BUTCHERED - WHOLE LAMB    

We raise North Country Cheviot lamb. Reserve your whole lamb in the spring/summer for pick up of your fully butchered custom cuts ready for your freezer in December. We aim for a dressed and butchered size of approximately 40lbs which will include your custom cuts plus your choice of sausages or ground lamb. We will send you a custom cut sheet for you to select how you want your lamb butchered along with a list of choices for flavoured sausages. You will receive 2 or 3 boxes containing shrink wrapped cuts and sausages which will store safely for up to 2 years in your freezer.
